Scarlet Runner Burgers

I’ve been trying to invent the veggie burger I want for a long time, and this is the latest iteration.  (I also tried a similar recipe with runner cannellinis, with worse results.)  It’s far from perfect, but it’s a step in the right direction.  I’ve tried a ton of other people’s recipes, and never really get what I’m looking for.  The next iteration of this recipe will probably contain some TVP for less uniform texture and a good bit more spices and flavorings.

Scarlet Runner Burgers

2/3 c dry scarlet runner beans
1 c wheat gluten
1 tbs tahini
1/2 tbs agave nectar
2/3 + 1/3 c water
1/3 c bread crumbs
1 tbs bragg’s
1 tbs dried sage
1 tbs chili pepper powder
1/2 tsp thyme
2 tbs nutritional yeast
salt

Prepare scarlet runner beans.  Combine all ingredients except wheat gluten and 1/3 c water in a food processor.  Process until beans are mostly pureed, but with some partial beans left.  Transfer to a bowl, and taste for salt content (it should be pretty salty, since there will also be extra wheat gluten).  Add the remaining water and mix well.  Then add the wheat gluten in small batches (4-5 batches), mixing well (I used a fork to sort of mash it in) each time.  The dough will be a little wet.  Knead until it comes together, and bake at 350 for 25-30 minutes.
